The Melaris vineyard is located in Moraro, in medium-textured soils that are intermediate between those of the two preceding vineyards. Water reserves are limited, but the well-aerated andideally-aspected site is perfect for vine growth.The grapes are picked as soon as they become over-ripe, with the skins starting to turn orangish and the aromas turning to orange preserves, since this stage makes it possible to ensurethe emergence of the spicy-floral qualities classic to this grapevariety. Overnight low-temperature maceration, followed by fermentation at 15-18°C. Maturation sur lies until May, then bottle-ageing until December-January 2012-2013.
